Best Recipes - Honey Layer Cake with Sour Cream and Condensed Milk Frosting

This honey layer cake is a home-style classic: thin, quick-baked honey sheets stacked with a creamy sour-cream frosting sweetened with condensed milk. The dough is warmed over a gentle water bath until it becomes lighter and increases in volume, then cooled so it can be divided and rolled into neat layers. After assembling, the cake softens as the frosting soaks in, giving you a tender slice with a balanced honey flavor.

Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 100 g butter
  • 3 tablespoons honey
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 3 cups flour, sifted
  • 500 g sour cream
  • Condensed milk (add to the frosting as needed for sweetness and a smooth, spreadable texture)

Preparation Time

Total: 100 minutes.

Step-by-Step Instructions

  1. In a bowl, combine the eggs and sugar and whisk lightly until smooth and slightly paler.
  2. Add the butter, honey, baking soda, and salt. Set the bowl over a simmering water bath on low heat and stir constantly so the mixture heats evenly without scorching.
  3. Warm for about 15 minutes, stirring all the while, until the mixture looks airy and expands to roughly double its volume. Remove from heat.
  4. Stir in the sifted flour. The dough should be soft and sticky—this is expected for honey cake layers.
  5. Wrap the dough in plastic wrap and let it cool to room temperature so it’s easier to handle.
  6. Divide the cooled dough into 5 portions. Roll each one to about 5 mm thickness on a lightly floured surface.
  7. Bake each layer at 200°C for 3–5 minutes, just until lightly golden. As soon as you remove a sheet from the oven, trim it to your desired shape while it’s still warm.
  8. Crush the trimmings into fine crumbs. Let all baked layers cool completely.
  9. Make the frosting by mixing sour cream with condensed milk until uniform and easy to spread.
  10. Assemble: place one layer on a tray, spread frosting evenly, and repeat with the remaining layers.
  11. Coat the cake with the crumbs. If you like, decorate the top with berries.

Tips

  • If the dough sticks while rolling, dust the surface and rolling pin lightly with flour, using only what you need.
  • These layers bake fast—watch closely so they don’t overbrown.
  • Add condensed milk gradually to fine-tune sweetness and thickness.
  • For the best texture, let the assembled cake rest so the layers soften.

Serving Suggestions

Slice and serve with tea or coffee. Fresh berries on top add brightness and a pleasant contrast to the honey notes. For a simple celebration look, press crumbs along the sides and finish with a small berry garnish in the center.
