  • 1 tablespoon cinnamon
  • Lemon zest
  • Ginger
  • Vanillin

Step-by-Step Instructions

  1. In a large pot over medium heat, melt 0.5 kg of the sugar. As it liquefies, add a small splash of water to help it dissolve evenly.
  2. Add the remaining 1 kg sugar and continue heating, stirring, until all the sugar has melted into a brown syrup.
  3. Stir in 1/2 cup oil until the syrup looks smooth and glossy.
  4. Remove the pot from the heat. Mix in 2 kg flour, then add all spices: cardamom, ground cloves, cinnamon, lemon zest, ginger, and vanillin. Combine into a uniform base dough.
  5. Cover and let the dough rest for 24 hours in a cool place so the flavor can develop.
  6. The next day, whisk the 3 eggs together with the baking powder and work this mixture into the dough.
  7. Finally, knead in the remaining 0.5 kg flour until the dough is elastic, rollable, and no longer sticky.
