Best Recipes - Carrot “Princess” Salad with Raisins, Corn and Apple

This quick carrot salad is a classic sweet-and-tangy mix that works equally well as an everyday side dish or a light addition to a festive table. Grated carrots and diced apples give it a fresh crunch, raisins bring natural sweetness, and canned corn adds a mellow bite. Lemon juice lifts the flavor and keeps the salad bright, while mayonnaise ties everything together into a creamy, spoonable texture.

Because the ingredient list is simple, small details make a big difference. Rinse and dry the raisins so they don’t dilute the dressing. Cut the apples right before mixing to keep them crisp. Most importantly, add the lemon juice gradually and taste as you go—the right amount depends on how sweet the apples and raisins are. If you’d like extra depth and a more festive feel, you can also add walnuts as an optional finishing touch.

Ingredients

  • 150 g carrots
  • 200 g raisins
  • 150 g canned corn
  • 200 g apples
  • 1 lemon
  • Mayonnaise
  • Walnuts (optional)

Preparation Time

15–20 minutes

Step-by-Step Instructions

  1. Peel the carrots and grate them (fine for a softer salad, medium for more crunch) into a large bowl.
  2. Rinse the raisins well and dry them thoroughly. If they feel very dry, you can briefly rinse them with warm water, then drain and pat dry so the salad stays creamy.
  3. Dice the apples into small pieces. For the freshest texture, cut them just before you mix everything together.
  4. Drain the canned corn and add it to the bowl along with the carrots, raisins, and apples.
  5. Squeeze the lemon. Add the juice little by little, mixing and tasting until the salad has a clean, balanced tang (add to taste).
  6. Add mayonnaise in an amount that lightly coats all the ingredients and brings the salad together. Mix until evenly combined.
  7. If using walnuts, chop them and fold them in gently, ideally right before serving.

Tips

  • Add lemon juice gradually—once it’s too sharp, it’s hard to correct.
  • If the salad seems watery, the raisins or apples may not have been dried/drained enough; next time, dry them more before mixing.
  • For a neater bite, keep the apple pieces small and even so they blend well with the grated carrots.
  • Stir the salad thoroughly so the mayonnaise distributes evenly instead of pooling at the bottom.

Serving Suggestions

Serve chilled or at cool room temperature as a side with roasted meats, fish, or a simple sandwich. It also looks great portioned into small bowls for a buffet-style spread. If you have a few minutes, let the salad rest briefly after mixing so the flavors mingle, then taste again and adjust the lemon juice if needed before bringing it to the table.
