  • Pinch of salt

  • 2 tsp gelatin (Santa Maria)
  • 50 ml water
  • Vanilla sugar

For the Soup:

  • 1 small red beet
  • A handful of pineapple pieces
  • A handful of frozen cherries
  • Honey to taste
  • Vanilla sugar
  • 1 tsp apple cider vinegar
  • 50-100 ml milk or cream

Step-by-Step Instructions

  1. Prepare the Marshmallows: Mix the egg yolk with orange juice and 1 tbsp sugar. Stir and heat gently until the mixture thickens. Add the grated cheese, stirring continuously until melted.
  2. Allow this creamy mixture to cool. In a cup, mix the gelatin with water and let it swell until ready to use.
  3. In a saucepan, combine 50 ml of water with 8 tbsp sugar and boil for about 7 minutes, stirring occasionally. The syrup is ready when a drop placed in cold water forms a soft ball.
