  1. Prepare the Gelatin: In two separate bowls, add 1 tbsp of gelatin to one and 4 tbsp in the other. Bloom both in cold water.
  2. Whip the Cream: Beat the whipping cream with 300-350 g sugar and vanilla sugar until peaks form. Melt the first bowl of gelatin (1 tbsp) in a microwave and fold it into the whipped cream. Place in the refrigerator to set.
  3. Make the Shortcrust Pastry: Melt the butter. Add sugar and whip until light and fluffy.
  4. In a separate bowl, add flour. Make a well in the middle and add baking soda, then pour vinegar over it. Mix well.
