Step-by-Step Instructions

  1. Start by preparing the ice cream. Mix the egg yolk with 2 tbsp of sugar and add milk. Stir with a whisk and heat over low heat, stirring constantly until thickened.
  2. Gradually fold in the Greek yogurt until everything is well combined.
  3. Peel and core the apples, then cut them into pieces. Bake in the oven or simmer in a small amount of water until soft.
  4. If baking, no water is needed. Blend the cooked apples into a puree.
  5. Add about 3 tbsp of sugar to the apple puree and beat until it becomes airy. Add the egg white and beat until light and creamy.
  6. Gently fold in the cream prepared from Greek yogurt and the cooked mixture.
  7. Pour the mixture into containers and freeze for at least 3 hours.
  8. For the strudel dough, mix the egg, salt, sugar, sour cream, and oil in a bowl. Add water and mix.
  9. Gradually add flour, starting with 1 cup (250 ml), then add spoonfuls as needed. Knead the dough until it is elastic and non-sticky.
  10. Clean your hands during the kneading process to avoid adding too much flour.
  11. Once elastic, let the dough rest in a bag at room temperature for 30 minutes. It might become sticky, but that's normal.
  12. Place a towel on your work surface and dust it lightly with flour.
  13. Roll out the dough on the towel until very thin and nearly transparent.
  14. For the filling, peel and dice the apples. Mix with corn starch, brown sugar, and cinnamon.
  15. Sprinkle breadcrumbs over the dough.
  16. Place the filling along one edge of the dough.
  17. Using the towel, roll the dough into a log with the filling inside.
  18. Carefully transfer the roll onto a baking sheet covered with parchment paper, using the towel to assist.
  19. Brush the roll with melted butter.
  20. Bake in a preheated oven at 180°C (356°F) for 20-30 minutes until the strudel is golden brown.
  21. Let the strudel cool down and dust with powdered sugar before serving.
  22. Serve slices of strudel with a scoop of ice cream. Decorate with raspberries and a sprinkle of cinnamon if desired.
  23. As the strudel cools, its layers become more defined and crispy.
  24. Enjoy the delightful combination of a warm, crispy strudel with a creamy, refreshing ice cream.
