Step-by-Step Instruction

  1. Place the dry biscuits in a resealable freezer bag. Seal the bag and crush the biscuits thoroughly using a rolling pin or with your hands.
  2. Melt the butter and mix it with the crushed biscuits and half of the coconut flakes. Press this mixture into the bottom of a springform pan lined with baking paper.
  3. Remove the outer husk from half of the cape gooseberries and cut the fruits into quarters.
  4. In a mixing bowl, blend the Philadelphia cream cheese, yogurt, lemon juice, rum flavoring, and quartered gooseberries using an electric hand mixer until smooth.
  5. Soak the gelatin in cold water for a short time, then squeeze out the excess water. Heat it gently with 150 ml of water and sugar until the gelatin dissolves completely.
  6. Gradually mix the dissolved gelatin into the Philadelphia cream mixture. Pour this creamy mixture into the prepared crust in the springform pan.
  7. Refrigerate the torte for at least 3 hours until firm.
  8. Before serving, decorate the torte with the remaining coconut flakes and whole cape gooseberries.
