Step-by-Step Instruction

  1. Rinse the chicken fillets and pat them dry. Then season both sides lightly with salt, pepper, and grated lemon zest.
  2. Finely chop the onions and garlic cloves.
  3. To easily peel the tomatoes, pour boiling water over them and let sit for a minute. Rinse under cold water and peel off the skins. Chop the tomatoes into small pieces, removing any stem parts.
  4. Pluck the leaves from the basil and parsley, then finely chop them.
  5. In a large sauté pan, heat half of the olive oil over medium-high heat. Sear the chicken fillets on both sides until golden brown, then remove them from the pan.
  6. Add the remaining olive oil to the pan. Sauté the chopped onions and garlic until they become translucent.
  7. Stir in the chopped tomatoes and pour in the wine (or chicken broth). Add one tablespoon of chopped herbs into the sauce.
  8. Season with salt and pepper, then return the chicken fillets to the pan.
  9. Cover the pan and simmer on low to medium heat for about 25 minutes. Stir occasionally to ensure even cooking.
  10. Once the chicken is cooked through and tender, taste and adjust the seasoning if needed.
