  1. Begin by cutting the pork into medium-sized pieces.

  4. As the onions turn a golden, slightly brown color, incorporate the grated carrots. Continue to fry at maximum temperature, stirring occasionally to prevent burning.
  5. Once everything is well cooked, pour boiling water over just to cover the meat. Add the spices, stirring well, and allow it to simmer under a lid for 10-15 minutes at medium heat.
  6. Stir the mixture again until the carrots change color and the onions turn a deep golden.
  7. Transfer everything into the pot if initially cooked in a pan. Mix in rinsed rice so it covers the surface but do not stir. Add a little more water, about 1-2 finger widths above the rice. Cook at medium temperature until all water evaporates.
  8. To check for doneness, pierce the rice with a wooden spoon to see if water remains.
  9. As water diminishes, insert garlic cloves into the rice.
  10. When all the water has evaporated, remove the pot from heat. Stir thoroughly and press a plate on top of the plov. Cover with a lid and wrap in a towel for 10-15 minutes.
